The secret of all Dolopia recipes relies on the ingredients and raw materials used; they are always fresh and born through a km 0 process, ideal for a small-scale production.
The production process of Dolopia takes place in Domokos village, in the central part of Greece. This is where Irini personally chooses, with patience and dedication, all the ingredients; each recipe is tested and modified several times until it reaches its final version.
Each production is in fact different from the previous seasons; the raw materials determine and permit the realization of this original tomato ketchup.
