History: Chios 1881 the story begins with the Rebecca (distillery), which grandfather Papa Manolis Psychis and his son Antonis Psychis run in Ververato of Chios and where figs and chips were distilled. In 1925 Konstantinos Psychos acquired the distillery license from Empedoklis Mastromichalakis, thereby realizing the dream of his grandfather Papa Manolis and his father Antonis, who taught him the art of distilling. In 1971, after the end of their military service, George and Panagiotis converted the sole proprietorship "Konstantinos Psychis" into their current company form "K. Soul & Sons OE" based in Chios and the characteristic "Traditional Soul Distillery". In 2011, the "Traditional Soul Distillery" passed into the hands of the 4th generation, who carried out a complete upgrade of the entire plant, which combined the traditional distillation and production method with the modern type of filling and packaging.
