The Ladotiri PDO Mitilini is produced with sheep's milk (with addition of goat's milk up to a maximum of 30%) is hard and is matured for about 3 months. Originally, the aging and conservation took place in extra virgin olive oil, capable of transmitting the slightly spicy flavour that characterizes it.
It is ideal as a table cheese as well as in several traditional Greek recipes (fried, savory pies, soufflés).
