Dry Anthotyro is an exquisite product made traditionally in the beautiful island of Crete. It's all about a white, semi-hard, sweet cheese that can be easily grated. Its' special characteristic is that after the production, it gets dried in a special drying room for several weeks, fact that gives this cheese a unique and buttery texture, even though it is semi-hard.
