  • Trilogy  of fresh summer vegetables (auberginesred peppers and zucchini) cooked in cast iron grates to gain deep and mellow roast flavour. 
  • Marinated for at least 24 hours, in a mixture of fresh herbs and extra virgin olive oil. Serve cool as appetizer, in sandwiches or on rusks soaked with the flavoured oil from the jar.
  • Goes well with Tsipouro.
