Eggplant is a vegetable that features in many Greek dishes, the most famous being moussaka and papoutsakia (these are eggplants stuffed with minced meat and bechamel sauce). Thanks to its sweet and delicious taste, it goes wonderfully with cheeses (like feta), tomatoes, potatoes, minced meat and red meat.
Consumption: Eggplant is eaten cooked, fried and smoked. As we have already mentioned, eggplant is found in moussaka and papoutsakia. It goes perfectly with meats in red sauce, in the wonderful Greek briam (various baked vegetables with red sauce) and in imam (eggplants stuffed with various cheeses, tomatoes, onions and herbs).
