TASTING NOTES: The colour is deep purple with ruby reflections. On the nose it is concentrated, very complex and multidimensional. Reveals aromas of red cherries, ripe plums, sweet vanilla and violet and tobacco hints. The mouth is smooth, velvety and full bodied with very ripe soft tannins. Black perfume and red fruits are filling the palate and accompanied by spices and tobacco flavours. The aftertaste is rich, long and complex.
VINIFICATION: Fermentation and alcoholic extraction in stainless steel tanks at 23 0C. Total extraction time 14 days. Full malolactic fermentation in barriques. Maturation in French barriques in second use for 8 months. The wine matures in bottle for another 6 months in cellar.
AGEING: 5 years
FOOD PAIRING: Red meat, poultry and semi-hard cheeses.
