Made from goat and sheep milk, Xynomyzithra is characterized by its white color and its rich, soft texture as well as its very special sour taste. The protected designation of origin (PDO) and its excellent quality are a significant step forward in the authenticity of the product. It is used as a basic ingredient in the Mediterranean diet in the Cretan Dako, in salads and cold dishes, but also in delicious Cretan cakes.

Its is shaped into a ball or a truncated cone, with a soft, creamy, white, and moist texture, and a sour taste. It is commonly served with honey as a dessert or used in salads and in baked goods, like the famous small cheese pies, kalitsounia.
