Aged Kefalotyri Naxou is a hard cheese with a unique, balanced flavor. It is the younger brother of Arseniko Naxou and is a "live cheese", meaning many enzymes remain alive due to its unpasteurized milk. As it ages, the cheese takes on a more spicy and aromatic flavor. Its complex taste pairs well with both red and white wines, making it a great accompaniment to your main course.
