The cheese Arseniko Naxou is an exquisite hard cheese. The distinctive flavour and uniqueness of the Naxos Arseniko cheese are due to the fact that the milk is not boiled and thanks to that many of the enzymes remain alive, so the shepherds say that it is a "live cheese". As the cheese ages its flavour changes and becomes more spicy and aromatic. It is a great cheese for making Saganaki, but you can also put it on top of your pasta. Also, it can be served as a table cheese to accompany your main course. It is a great pairing for both red and white wines, due to its unique taste!
