Melitzanosalata is a traditional Greek dip with eggplant as its' base ingredient (melitzana in Greek, hence the name). The eggplants are being baked in the oven with onions and then their flesh is put in the blender, along with olive oil, spices and lemon juice. This gives to the Melitzanosalata an amazing spread-like texture that makes it special. It is an extremely healthy dip, as it contains only pure vegetables and olive oil. It is a typical exceptional meze as an appetizer, but you can also spread it on top of your bread because of its' soft texture!
