The Aged Kefalotyri Naxou is a traditional Greek hard cheese produced on the island of Naxos using raw goat’s and sheep’s milk. Often considered the younger brother of Arseniko, this cheese is a true “live cheese”, as many natural enzymes remain active thanks to the use of unpasteurised milk.

 

During maturation, Kefalotyri develops a bold yet balanced flavour, evolving from delicate dairy notes into a more aromatic, savoury and slightly spicy profile. Its firm texture and complex taste make it extremely versatile in the kitchen and ideal for both everyday cooking and refined pairings.
