These Kalamata olives were not nearly as tasty as the ones we brought back from Greece this last spring. These were more bitter and less flavorful. I can find better here in the States.

Kalamata olives cured in brine shift with the harvest and with how long they sit in it, so a firmer and more bitter batch sits inside the natural range rather than outside it, even if it is not what you were hoping to find again. If you want the softer, sweeter end of the shelf, the Throuba olives from Thasos are naturally cured and much gentler.
