Skordalia sauce is one of the most typical Greek dips ever! It is made from fresh garlic cloves, potatoes, olive oil and vinegar. The intense taste of garlic mixed with the potatoes and the rest of the ingredients give a taste like no other, but also a unique spread-like texture.
It is a great pairing with fish, but it can go also perfectly with red meat. One of the most traditional ways to eat it in Greece is with codfish and beets for the national holiday of the 25th of March. However, you can also use the Skordalia to be your dip for the ‘mezedes’ you will enjoy with your tsipouro or ouzo!
