Meatballs and orzo in one tray, the way a Thessaloniki kitchen sends them out

Soutzoukakia are the Greek meatballs shaped long rather than round, simmered in tomato instead of fried dry, and served over kritharaki, the rice-shaped durum wheat pasta the rest of Europe knows as orzo. Amvrosia makes this version in Sindos, outside Thessaloniki, and chills it rather than freezing it. Half the tray is boiled orzo and 28% is meatballs, which puts just under 20% minced meat of EU origin in the finished dish: 80% pork and 20% beef. Tomato, onion, a spice blend and 3,5% extra virgin olive oil do the rest.

The meatballs are soft rather than firm, because they carry wheat rusk and finish their cooking in the sauce instead of being seared. The orzo underneath cooks in the tomato and takes its colour from it, which is also what keeps it from drying out when the tray is reheated. The flavour is plain in the Greek domestic sense, warm and without a sharp edge, the sort of thing eaten on a weeknight rather than ordered in a restaurant. One thing is worth knowing before you open it: this is a pasta dish with meatballs on top, and the orzo is half of it by recipe.

A 350g tray carries 42g of protein and 777 kcal, which puts it among full main courses rather than light lunches. It also has the shortest ingredient list of the ready meals in this range: nine items, no additives, no colourings, no modified starch. The dish itself reached Greece with the refugees from Smyrna in the 1920s, most of whom settled in and around Thessaloniki, which is where it is still made.

  • With a green salad and a piece of feta, which is how it is eaten in Greece rather than with bread.

This is a fresh, chilled dish, not an ambient or frozen one, and everything about how it's kept follows from that. It travels cold, it lives in the fridge, and the sealed film is what protects it until you open it.

How to store it correctly

  • Keep refrigerated below +7°C: put it in the fridge as soon as it arrives, in the coldest part rather than the door.
  • Do not freeze it: boiled pasta is the ingredient that freezing damages most, and a chilled ready meal is not built to be frozen at home.
  • Leave the film sealed: the protective atmosphere inside the tray is doing the preservation work, and once the seal is broken, that protection ends.

Freshness timeline

  • Unopened, refrigerated: keeps until the use-by date printed on the tray. Check that date when the parcel arrives.
  • Opened: eat within 24 hours, kept refrigerated.

Why a chilled tray rather than a frozen one

Short pasta is one of the things freezing treats worst. Water inside the orzo forms crystals, and on thawing the grains lose the firmness that lets them stay separate in the sauce, which is why frozen pasta dishes tend to reach the table uniformly soft. A chilled tray skips all of that: the dish is cooked in Greece, cooled, sealed, and the only heat it sees afterwards is yours. The trade is a shorter window, not a lesser dish.
