Product Description

PDO barrel feta with a litre of brine to keep it once opened

Feta PDO "Arcadia Reserve" comes from Tripoli, in Arcadia, and is matured in wooden barrels. It arrives as a vacuum-sealed piece of 360g. The offer pairs it with a 1L bottle of Almi Greek brine solution, so the feta has somewhere to go once the pack is open.

Once opened, feta goes back into brine: that is how Greek kitchens keep it. Put the piece in a glass jar, cover it fully with Almi and close the lid. Cut what you need, and the rest stays covered.

Almi is ready to use, with no dilution. Change it when it turns bright yellow. Keep the bottle at room temperature until you open it, then in the fridge.

How to use it

  • A slab on a Greek salad with tomato, cucumber and oregano
  • Baked in foil with olive oil, chilli and tomato (feta psiti)
  • Crumbled into spanakopita or over grilled vegetables
  • With honey and walnuts at the end of the meal

More feta from Greece in our feta collection. The crossed-out price is what the feta and the brine cost when bought separately.

Nutritional Components

Barrel-aged PDO feta, and the brine that keeps it.

The feta is a PDO cheese from sheep's milk with up to 30% goat's milk, matured in wooden barrels; the Almi bottle is a Greek brine solution for keeping it after opening.

Useful Information

Storage guide: feta under brine.

Feta dries out in the air. Under brine it keeps its moisture and texture.

How to store it correctly:

  • Feta: in the fridge at 2-4°C.
  • After opening: in a glass or ceramic jar, fully covered with Almi, lid closed.
  • Almi bottle: at room temperature until opened; once opened, in the fridge for up to 60 days.
  • Changing the brine: when it turns bright yellow.
  • Almi is not for drinking: it is only for keeping feta, white cheeses, olives and pickles.
