Moussaka is the dish most people name first when they think of Greek cooking, and it is also the one that takes the longest to make at home: aubergine to fry, potato to prepare, a meat sauce to reduce, a béchamel to whisk, then the oven. Amvrosia makes it in Greece the same layered way, in a 350g tray, and chills it rather than freezing it. Aubergine at 21% and potato at 20% sit in layers with 15% minced beef and pork, under béchamel and a golden top. What arrives is a single sealed portion that has never been frozen.

Texture is the whole point of a moussaka, and it is the first thing freezing takes away. The potato layer holds its shape, the fried aubergine stays soft without collapsing into oil, and the béchamel sets on top instead of separating. In the oven it develops a crust; in the microwave it is faster but flatter. The flavour is deliberately plain in the Greek sense: tomato, onion, parsley and olive oil, nothing sharp.

A weeknight main on its own, or half a tray as a first course before grilled fish or meat.

How to store it correctly

On arrival: into the fridge straight away, below +7°C.
Keep it sealed: the protective atmosphere inside the tray is what preserves the dish. Pierce the film only when you are about to heat it.
Do not freeze it: freezing separates the béchamel and turns the potato layer watery.

Freshness timeline

Unopened, refrigerated: use by the date printed on the tray. Typically, one to two months are left from the day the order arrives.
Once opened: eat within 24 hours.
Heated: eat it the same day. A reheated tray does not go back in the fridge for later.

Suggested preparation

Oven: preheat to 180°C. Remove the outer packaging, pierce the film in two spots with a fork, heat for 13 to 15 minutes, remove the film and serve.

Why a chilled tray rather than a frozen one

Frozen moussaka is easier to ship and cheaper to hold, and it is what most of the category does. It is also what changes the dish: ice crystals break down the structure of the aubergine, and the béchamel splits on thawing. A chilled tray costs more to move across Europe and gives a shorter window. In exchange, the layers arrive as they left the kitchen.
