Product Description

PDO barrel feta from the mountains of Arcadia, in a piece of about 420g

Feta PDO "Arcadia Reserve" is a barrel feta from the mountains of Arcadia, in the Peloponnese. It is made from Greek pasteurised sheep's milk, with goat's milk up to 30%, and matured in brine in wooden barrels: "barrel" is the word the label uses, varelisia. It arrives as a vacuum-sealed piece of about 420g: each piece is weighed on its own and can vary by up to 15% either way, and the exact weight is printed on its label.

The piece is white and compact. It is firm enough to cut into a clean slab and turns creamy when you crumble it, with a salty, tangy taste. If you find it too salty, soak the slice in cold water for a few minutes before serving.

Per 100g the label declares 15g of protein and 2g of salt. In a Greek kitchen a piece like this stays in the fridge and comes out at most meals: a slab on the salad, a few cubes with olives and bread, crumbled into a pie. Once the pack is open, keep it under brine and cut only what you need. More on how feta is made in our guide to Greek feta.

How to use it

  • A slab on a Greek salad with tomato, cucumber and oregano
  • Baked in foil with olive oil, chilli and tomato (feta psiti)
  • Crumbled into spanakopita or over grilled vegetables
  • With honey and walnuts at the end of the meal

To keep it once opened, the same feta comes with a litre of Almi brine in the feta and brine offer.

Useful Information

Storage guide: keeping barrel feta once it is opened.

Vacuum-sealed, the feta keeps in the fridge until the date on the pack. Once opened it dries out in the air, so it goes back into brine.

How to store it correctly:

  • Closed pack: in the fridge at +2 to +4°C.
  • After opening: in a glass or ceramic jar, fully covered with brine, lid closed. Almi Greek brine is made for this.
  • Serving: take it out of the fridge 15 minutes before serving, so the taste opens up.

Freshness timeline:

  • Unopened: until the best-before date printed on the pack, kept at +2 to +4°C.
  • Opened, under brine: keep the piece fully covered and the jar closed; take out what you need with a clean fork.
