Useful Information
The location of the vineyards that produce this unique wine is in Pyrgos village, Santorini & Therasia, with an altitude of up to 400 meters. The age of the vines is 20-60 years and they undergo the traditional pruning method of “Kouloura” (basket-shaped). The grapes are handpicked, sundried for 6-8 days and then slowly fermented for 40 days. Maturation occurs for 36 months in oak barrels, and the ageing process continues in the bottle.
