A rare cheese from Skyros made from local sheep and goat milk, aged with thyme. The cheese is smeared with olive oil and mountain herbs to mature, then sealed in large clay jars and buried in the ground for 8 months. Thus, the taste of the cheese becomes spicy and aromatic. Make an ideal combination with breadsticks, olives and Assyrtiko white wine.
