Product Description

Layered, baked and chilled in Greece, on the table in four minutes

Moussaka is the dish most people name first when they think of Greek cooking, and it is also the one that takes the longest to make at home: aubergine to fry, potato to prepare, a meat sauce to reduce, a béchamel to whisk, then the oven. Amvrosia makes it in Greece the same layered way, in a 350g tray, and chills it rather than freezing it. Aubergine at 21% and potato at 20% sit in layers with 15% minced beef and pork, under béchamel and a golden top. What arrives is a single sealed portion that has never been frozen.

Texture is the whole point of a moussaka, and it is the first thing freezing takes away. The potato layer holds its shape, the fried aubergine stays soft without collapsing into oil, and the béchamel sets on top instead of separating. In the oven it develops a crust; in the microwave it is faster but flatter. The flavour is deliberately plain in the Greek sense: tomato, onion, parsley and olive oil, nothing sharp.

A 350g tray carries 19g of protein and 469 kcal, which puts it among proper main courses rather than snacks, and it is a complete plate on its own: vegetable, starch and meat in the same tray. That is also why this format works midweek. One tray, one plate, one fork, four minutes.

No preservatives, and chilled rather than frozen: how that works

Fresh food ordered online always raises the same question, which is how it keeps without either a freezer or a preservative. The answer here is the packaging. The tray is sealed in a protective atmosphere, and that is what keeps the dish without anything being added to it.

  • No preservatives in the recipe. The ingredient list is the whole story.
  • Keep refrigerated below +7°C, and once opened, eat within 24 hours.
  • Never frozen at any point, which is why the aubergine and the béchamel keep their texture. The use-by date is printed on the tray.

How to use it

  • Oven, 180°C for 13 to 15 minutes once preheated. Pierce the film in two spots first; remove it before serving. This is the version with the crust.
  • Microwave, 3 to 4 minutes at 800W, same piercing step. Faster, softer on top. Keep the tray clear of the oven element and the grill.
  • A weeknight main on its own, or half a tray as a first course before grilled fish or meat.
  • With a green salad and a piece of feta, which is how it is eaten in Greece rather than with bread.

Nutritional Components

A full main course in a 350g tray: what is actually in it

Moussaka draws its nutrition from three places at once: fried aubergine and potato for the bulk, minced beef and pork for the protein, béchamel for the fat. The figures below are per 100g. A whole tray is three and a half times each of them.

What the numbers mean in practice

  • 19g of protein per tray: enough for the dish to stand as the main course of a meal rather than a side.
  • A complete plate: vegetable, starch and meat in one tray, so nothing else is strictly needed alongside it.
  • 469 kcal per tray: the range of a cooked home portion, not of a light lunch.
  • No preservatives: the dish keeps because it is chilled and sealed in a protective atmosphere, not because something was added to it.
  • 3g of salt per tray: worth knowing if you watch sodium, since it is a substantial share of a day's reference intake.

Useful Information

Storage guide: below +7°C, and what the sealed tray does

This is a fresh dish, sealed in a protective atmosphere and chilled, that has never been frozen and carries no preservatives. That combination is what gives it both its texture and its shelf life.

How to store it correctly

  • On arrival: into the fridge straight away, below +7°C.
  • Keep it sealed: the protective atmosphere inside the tray is what preserves the dish. Pierce the film only when you are about to heat it.
  • Do not freeze it: freezing separates the béchamel and turns the potato layer watery.

Freshness timeline

  • Unopened, refrigerated: use by the date printed on the tray. Typically, one to two months are left from the day the order arrives.
  • Once opened: eat within 24 hours.
  • Heated: eat it the same day. A reheated tray does not go back in the fridge for later.

Suggested preparation

  • Oven: preheat to 180°C. Remove the outer packaging, pierce the film in two spots with a fork, heat for 13 to 15 minutes, remove the film and serve.
  • Microwave: same first two steps, then 3 to 4 minutes at 800W.
  • Either way: keep the tray clear of the oven element and the grill. Times vary slightly with the appliance.

Why a chilled tray rather than a frozen one

Frozen moussaka is easier to ship and cheaper to hold, and it is what most of the category does. It is also what changes the dish: ice crystals break down the structure of the aubergine, and the béchamel splits on thawing. A chilled tray costs more to move across Europe and gives a shorter window. In exchange, the layers arrive as they left the kitchen.

It is the difference between a moussaka you serve and one you apologise for.
