Gemista means "the filled ones", and it is the dish a Greek kitchen makes when the vegetables are worth building a meal around rather than serving beside one. Tomatoes and peppers are hollowed, filled with rice, and baked with potato and aubergine around them until everything has taken the same oil. Amvrosia makes them in Sindos, outside Thessaloniki, and chills the tray rather than freezing it. Boiled rice is the largest ingredient at 56%, tomato and pepper together are 17%, and 6% extra virgin olive oil runs through all of it. What arrives is one sealed 350g tray that has never been through a freezer.
That olive oil figure is the recipe rather than a detail. Gemista belongs to the ladera, the family of Greek dishes cooked in olive oil rather than with a spoonful of it added at the end, and it is what gives the tomato its depth and the potato its softness. The rice is meant to be soft: it swells inside the vegetable and takes up the juice, which is the whole point of the dish and the opposite of a rice served loose and separate. The seasoning is plain in the Greek domestic sense: tomato, onion, garlic and parsley, with nothing sharp in it.
One thing is worth knowing before you order, because it sets the expectation right. There is no meat, no dairy, and no egg in this recipe, and a full tray carries 434 kcal, 8,1g of fibre, and 2,14g of salt. It is a vegetable main course, not a meat-and-starch bake, and in Greece it comes to the table the way it is built: on its own with bread and a piece of feta, or beside grilled fish. Ordered as a light plant-based lunch, it is generous. Ordered expecting a moussaka, it will read small.
Fresh food ordered online always raises the same question, which is how it keeps without either a freezer or a preservative. The answer here is the packaging. The tray is sealed in a protective atmosphere, and that is what keeps the dish without anything being added to it.
Gemista are built from the vegetable outwards. 56% boiled rice, 17% tomato and pepper, then aubergine, potato and onion, bound by 6% extra virgin olive oil and nothing else. There is no meat, no milk and no egg anywhere in the recipe, and it shows in every line of the table below.

This is a fresh, chilled dish, not an ambient or frozen one, and everything about how it's kept follows from that. It travels cold, it lives in the fridge, and the sealed film is what protects it until you open it.
Ladera is the Greek word for dishes cooked in olive oil rather than seasoned with it at the end, and gemista are the best known of them. At 6%, the oil here is not a dressing; it is the cooking medium: it carries the tomato into the rice, keeps the aubergine from drying out, and pools at the bottom of the tray, which is why bread belongs next to this plate. It is also why the dish reheats well, since the oil protects the vegetables from the second heat instead of leaving them to dry out. The oil is the recipe, not the finish.

Sui gemista la cottura lunga è voluta: il riso finisce di cuocere dentro il pomodoro e il pomodoro si disfa apposta, perché è così che il ladera greco rilascia il suo olio e il suo sugo, molto lontano da un pomodoro ripieno servito al dente.
