Gemista means "the filled ones", and it is the dish a Greek kitchen makes when the vegetables are worth building a meal around rather than serving beside one. Tomatoes and peppers are hollowed, filled with rice, and baked with potato and aubergine around them until everything has taken the same oil. Amvrosia makes them in Sindos, outside Thessaloniki, and chills the tray rather than freezing it. Boiled rice is the largest ingredient at 56%, tomato and pepper together are 17%, and 6% extra virgin olive oil runs through all of it. What arrives is one sealed 350g tray that has never been through a freezer.
That olive oil figure is the recipe rather than a detail. Gemista belongs to the ladera, the family of Greek dishes cooked in olive oil rather than with a spoonful of it added at the end, and it is what gives the tomato its depth and the potato its softness. The rice is meant to be soft: it swells inside the vegetable and takes up the juice, which is the whole point of the dish and the opposite of a rice served loose and separate. The seasoning is plain in the Greek domestic sense: tomato, onion, garlic and parsley, with nothing sharp in it.
One thing is worth knowing before you order, because it sets the expectation right. There is no meat, no dairy, and no egg in this recipe, and a full tray carries 434 kcal, 8,1g of fibre, and 2,14g of salt, less than half what the meat trays in this range carry. It is a vegetable main course, not a meat-and-starch bake, and in Greece it comes to the table the way it is built: on its own with bread and a piece of feta, or beside grilled fish. - Microwave, 3 to 4 minutes at 800W, same piercing step. Keep the tray clear of the oven element and the grill.
- A plant-based lunch on its own, with bread to take up the oil at the bottom of the tray.
- As a warm vegetable course beside grilled fish or meat, which is how a Greek table uses it.
- With a piece of feta alongside, if you are not keeping the plate vegan.

This is a fresh, chilled dish, not an ambient or frozen one, and everything about how it's kept follows from that. It travels cold, it lives in the fridge, and the sealed film is what protects it until you open it.
How to store it correctly
- Keep refrigerated below +7°C: put it in the fridge as soon as it arrives, in the coldest part rather than the door.
- Do not freeze it: pepper skin collapses when it thaws, and potato turns grainy, which is exactly what a chilled tray avoids.
- Leave the film sealed: the protective atmosphere inside the tray is doing the preservation work, and once the seal is broken, that protection ends.
Freshness timeline
- Unopened, refrigerated: keeps until the use-by date printed on the tray. Check that date when the parcel arrives.
- Opened: eat within 24 hours, kept refrigerated.
- Heated: eat straight away. Do not reheat a second time.

Why olive oil defines this dish
Ladera is the Greek word for dishes cooked in olive oil rather than seasoned with it at the end, and gemista are the best known of them. At 6%, the oil here is not a dressing; it is the cooking medium: it carries the tomato into the rice, keeps the aubergine from drying out, and pools at the bottom of the tray, which is why bread belongs next to this plate.
