September is when the Greek table comes back indoors. The foods that carried the summer — PDO feta from the mountain dairies of Epirus and the Peloponnese, strained yogurt and kefir, pulses, olive oil pressed where the olives grow — stop being holiday food and become the week.
That is what the reset means here. Nothing to give up, nothing to replace. Feta is sheep's and goat's milk matured in brine, made the way it has been made for generations. Yogurt is strained the traditional way, in clay pots. Kefir is naturally fermented. Gigantes, fava and lentils are the weeknight dinner of every Greek village.
Build the routine rather than the exception: feta and olive oil on the daily salad, yogurt or kefir at breakfast, a pot of pulses once a week, pita to carry it. All of it shipped from Greece.
