Product Description

Zucchini filled with rice and meat, finished in the egg and lemon sauce that gives the dish its name.

Kolokithakia gemista are zucchini hollowed out, filled with rice, minced meat, and onion, then simmered in the pot rather than baked. What makes them this particular dish is what goes in at the end: avgolemono, the Greek sauce of egg yolk and lemon juice whisked into the hot cooking liquid, which thickens without any cream and sets the pale, glossy finish you can see in the photographs. Amvrosia makes them in Sindos, outside Thessaloniki, and chills the tray rather than freezing it. Zucchini is the largest ingredient at 50%, the filling is 15% boiled rice and 12,5% beef and pork, and one sealed 400g tray arrives having never been through a freezer.

The sauce is the part worth understanding before you order. A Greek domestic avgolemono is mild rather than sharp: it carries lemon instead of tasting of it, and it is meant to coat the zucchini rather than pool around them. The zucchini stay soft and faintly sweet, the rice is boiled and takes up the sauce, and the seasoning is plain in the household sense: onion, garlic, parsley, mint and dill. Serve it properly hot. An avgolemono served lukewarm reads as bland, which is the one thing this dish is not.

It is a vegetable dish with meat in it rather than the other way round. Half the tray is zucchini, and the meat is one-eighth of it, which is how the dish is built in Greece and why it sits lighter than the baked trays in this range. A full tray carries 340 kcal and 14g of protein, and it is one generous portion for one person rather than a plate to divide. The sauce is where both allergens are: this recipe contains wheat and egg.

No preservatives, and chilled rather than frozen: how that works

Fresh food ordered online raises the same question every time, which is how it keeps with neither a freezer nor a preservative. The answer here is the packaging. The tray is sealed in a protective atmosphere, and that is what keeps the dish without anything being added to it.

  • No preservatives in the recipe. The list printed on the tray is the whole story.
  • Keep refrigerated below +7°C, and once opened, eat within 24 hours.
  • Never frozen at any point, which is why the zucchini holds its shape and the sauce does not separate. The use-by date is printed on the tray.

How to use it

  • Oven, 180°C for 13 to 15 minutes once preheated. Pierce the film in two spots first, and remove it before serving.
  • Microwave, 3 to 4 minutes at 800W, same piercing step. Keep the tray clear of the oven element and the grill.
  • One hot meal for one person, with bread to take up the sauce left in the tray.
  • With a green salad alongside, which is how a Greek table fills out a plate of gemista.
  • As the warm course after a cold meze of olives, feta, and dips.

Nutritional Components

Half zucchini, an eighth meat: what is actually in this tray

Kolokithakia gemista are built from the vegetable outwards. 50% zucchini, then a filling of 15% boiled rice and 12,5% minced beef and pork, with carrot and onion, all of it finished in an egg yolk and lemon sauce thickened with wheat flour. The meat is there for flavour and body rather than as the centre of the plate, which is what makes this the lightest tray in this range at 340 kcal.

What the numbers mean in practice

  • 340 kcal in a full tray: 85 kcal per 100g, the lowest energy density of the trays we sell, and it comes from the zucchini being half the recipe.
  • 14g of protein per tray: 16,5% of the energy in the dish, from the beef, the pork, and the egg yolk in the sauce.
  • 8,4g of fibre per tray: 2,1g per 100g, from the zucchini and the carrot rather than from anything added.
  • Saturated fat at 1,0g per 100g: most of the fat here is the sunflower and olive oil in the sauce.
  • Salt at 1,00g per 100g, 4,00g in a full tray. Worth knowing if you are watching salt: this is a seasoned savoury dish, not a low-sodium one.
  • No preservatives: the tray holds because it is sealed in a protective atmosphere, not because anything was added to the recipe.

Useful Information

Storage guide: below +7°C, and what the sealed tray does

This is a fresh, chilled dish, not an ambient or frozen one, and everything about how it's kept follows from that. It travels cold, it lives in the fridge, and the sealed film is what protects it until you open it.

How to store it correctly

  • Keep refrigerated below +7°C: put it in the fridge as soon as it arrives, in the coldest part rather than the door.
  • Do not freeze it: an egg and lemon sauce separates when it thaws, and the zucchini loses its shape. This is exactly what a chilled tray avoids.
  • Leave the film sealed: the protective atmosphere inside the tray is doing the preservation work, and once the seal is broken, that protection ends.

Freshness timeline

  • Unopened, refrigerated: keeps until the use-by date printed on the tray. Check that date when the parcel arrives.
  • Opened: eat within 24 hours, kept refrigerated.
  • Heated: eat straight away. Do not reheat a second time, and do not let it stand: the sauce is at its best hot.

Suggested preparation

  • Remove the outer cardboard sleeve.
  • Pierce the sealing film in two spots with a fork.
  • Oven: 180°C in a preheated oven for 13 to 15 minutes. Temperature and time vary with the oven.
  • Microwave: 3 to 4 minutes at 800W.
  • Remove the film and serve hot. The tray must not come into contact with the oven element or the grill.

Why avgolemono has to be served hot

Avgolemono is the Greek sauce of egg yolk and lemon, whisked into hot liquid so it thickens without cream. It is a mild sauce by design: it should carry the lemon rather than taste of it, and it should coat the zucchini rather than sit under them. What it does not survive is being served lukewarm, because the aroma of the lemon is the first thing to go, and what stays behind reads as flat. Heat it the full time, serve it immediately, and it does what it is supposed to do.
