Thyme honey has been admired since antiquity. The philosophers of classical Greece often praised the honey produced from thyme-covered hills, especially the famous honey of Mount Hymettus near Athens. Plato himself referred to this honey as a symbol of sweetness and inspiration. While this honey does not come from Hymettus but from Crete, it clearly belongs to the same noble family of thyme honeys that the Greeks valued so highly. It is delicious.
