Kolokithakia gemista are zucchini hollowed out, filled with rice, minced meat, and onion, then simmered in the pot rather than baked. What makes them this particular dish is what goes in at the end: avgolemono, the Greek sauce of egg yolk and lemon juice whisked into the hot cooking liquid, which thickens without any cream and sets the pale, glossy finish you can see in the photographs. Amvrosia makes them in Sindos, outside Thessaloniki, and chills the tray rather than freezing it. Zucchini is the largest ingredient at 50%, the filling is 15% boiled rice and 12,5% beef and pork, and one sealed 400g tray arrives having never been through a freezer.
The sauce is the part worth understanding before you order. A Greek domestic avgolemono is mild rather than sharp: it carries lemon instead of tasting of it, and it is meant to coat the zucchini rather than pool around them. The zucchini stay soft and faintly sweet, the rice is boiled and takes up the sauce, and the seasoning is plain in the household sense: onion, garlic, parsley, mint and dill. Serve it properly hot. An avgolemono served lukewarm reads as bland, which is the one thing this dish is not.
It is a vegetable dish with meat in it rather than the other way round. Half the tray is zucchini, and the meat is one-eighth of it, which is how the dish is built in Greece and why it sits lighter than the baked trays in this range. A full tray carries 340 kcal and 14g of protein, and it is one generous portion for one person rather than a plate to divide. The sauce is where both allergens are: this recipe contains wheat and egg.
Fresh food ordered online raises the same question every time, which is how it keeps with neither a freezer nor a preservative. The answer here is the packaging. The tray is sealed in a protective atmosphere, and that is what keeps the dish without anything being added to it.

This is a fresh, chilled dish, not an ambient or frozen one, and everything about how it's kept follows from that. It travels cold, it lives in the fridge, and the sealed film is what protects it until you open it.
Avgolemono is the Greek sauce of egg yolk and lemon, whisked into hot liquid so it thickens without cream. It is a mild sauce by design: it should carry the lemon rather than taste of it, and it should coat the zucchini rather than sit under them. What it does not survive is being served lukewarm, because the aroma of the lemon is the first thing to go, and what stays behind reads as flat. Heat it the full time, serve it immediately, and it does what it is supposed to do.
